Our Organic Nitrate-Free Christmas Ham is raised under fully organic conditions in Australia, fed organic grains, and free from synthetic chemicals, growth hormones and routine antibiotics. It carries certification from recognised organic bodies (e.g. ACO or equivalent). What makes this ham special is its nitrate-free curing: no synthetic nitrates or nitrites are added during processing. Instead, natural curing agents such as sea salt, celery powder or fruit extracts are used to preserve flavour and safety, with no artificial preservatives.

Thaw gradually in the fridge before cooking or reheating; once thawed, do not refreeze. Always keep wrapped or sealed to avoid exposure to air, odours or drying.
Cooking, Serving & Serving Suggestions
Bring the ham to room temperature before warming. Glaze with a mixture of honey or maple syrup, orange juice, Dijon mustard and a hint of cloves or cinnamon. Warm gently in a low oven (120–130 °C) until internal temperature reaches ~60–65 °C (use a meat thermometer). Slice thinly across the grain and serve with roast vegetables, steamed greens, cranberry or fig chutney, or a mustard-cream sauce.
