We age our Organic Vintage Cheddar to create a rich, full-bodied flavor. First, we mature our regular cheddar for at least six months. Then, we carefully select the finest wheels and continue aging them for another six months. This extra maturation gives the cheese a subtle yet deep flavor that stands out.
