Organic Spinach and Mushroom Stuffed Portobello Mushrooms

These Organic Spinach and Mushroom Stuffed Portobello Mushrooms are a savory delight! Packed with organic goodness, these mushrooms make a satisfying and nutritious meal. Perfect for a cozy night in!
Ingredients:
- 4 large organic portobello mushrooms, stems removed
- 2 cups organic spinach, chopped
- 1 cup organic mushrooms, diced
- 1 onion, diced
- 2 cloves garlic, minced
- 1/2 cup breadcrumbs
- 1/4 cup grated organic Parmesan cheese
- Salt and pepper, to taste
- Olive oil
Instructions:
- Preheat oven to 375°F (190°C). Brush portobello mushroom caps with olive oil and place them on a baking sheet, gill-side up. Bake for 10 minutes.
- In a skillet, heat olive oil over medium heat. Sauté diced onion and minced garlic until softened.
- Add diced mushrooms and chopped spinach to the skillet. Cook until mushrooms are tender and spinach is wilted.
- Stir in breadcrumbs, grated Parmesan cheese, salt, and pepper. Mix well until combined.
- Spoon the spinach and mushroom mixture into the baked portobello mushroom caps.
- Return stuffed mushrooms to the oven and bake for another 10-12 minutes, until filling is golden brown and mushrooms are cooked through.
- Serve hot, garnished with additional Parmesan cheese if desired.
