Organic Roasted Pear with Maple Pecan Crumble

Ingredients
- 3 Packham Pears, halved
- 1/2 cup rolled oats
- 1/2 cup pecans, roughly chopped
- 1/3 cup organic maple syrup
- 1 teaspoon vanilla bean extract
- 1/2 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1/4 teaspoon cloves
- Pinch sea salt
- 4 medjool dates, pitted
- 1/4 cup coconut yoghurt
Method
- Preheat oven to 200ºC.
- Line a baking tray with baking paper, set aside.
- Scoop out the middle centre part of each pear.
- Slice a small portion off the bottom so the pears can lie flat.
- In a medium sized bowl combine oats, pecans, maple syrup, vanilla, cinnamon, nutmeg, cloves
and salt. Using a tablespoon, scoop out the mixture and fill each pear. - Cover the tray with another layer of baking paper so the crumble doesn’t burn. Bake in the oven for 30-35 minutes, until the pears are soft and the crumble is crispy.
- Cut the medjool dates into small pieces and place on top of each pear. Serve with a dollop of
coconut yogurt, pinch of cinnamon and drizzled maple syrup. - Enjoy warmed!
