Chicken Burrito Bowl

Quick and easy chicken burrito bowl, full of fresh ingredients and vibrant flavours! It’s healthy and filling, perfect for a light lunch time or dinner meal.
Serves 2

Ingredients:
1 chicken breast or tenderloin
2 tbsp chipotle tabasco
2 tbsp Organic Coconut Aminos
1 avocado
1 tomato (diced)
½ bunch coriander
½ capsicum
½ onion
1 tbsp Organic Oregano Leaf
2 cloves garlic
¼ zucchini
Juice of ½ lime
1 tin of Organic Black Beans
2 radishes
Pickled red onions – recipe here
1 cup Brown Rice or Organic Wild Rice
Method:
- Soak rice for 6-24 hrs or rinse rice until water runs clear. Once cooked add rice to bowl and add the beans in.
- Marinate chicken in coconut aminos and chipotle tabasco for a minimum of 2 hrs before cooking and slicing.
- Pan-fry chicken until cooked through before slicing.
- Sauté zucchini, capsicum and onion with garlic and oregano.
- Mash avocado with juice of half lime, salt and pepper.
- Dice tomato with coriander.
- Thinly slice radishes.
- Place rice at the bottom of the bowl. Add chicken, sautéed vegetables, radish, pickled red onions and tomato, coriander mixture. Top with guacamole.
