There are different nutrient values and used for bananas as they ripen.

Different Stages during the Organic Banana Ripening Process

Stage 1 – Deep Green

It has 100% deep green, no yellowing. You don’t see them as often as the other stages as a consumer. It’s a great cooking banana. It is really tough for the consumer to ripen correctly from this stage and is more for either cooking or arrival from overseas to a ripening facility to begin the ripening process.

Stage 2 – Light Green

Light green with some yellowing, anywhere from 75-80% green. This is where the color changes as ripening begins in the warehouse. This is also a good cooking option.

Stage 3 – Equally Green & Yellow

This is a firm banana with the starches turning into sugar. It is ideal for shipping into retail settings. This is more of a storage banana, typically at room temperature in your dry storage, this would break and turn in about two days.

Stage 4 – More Yellow than Green

Ideal for display. It is one of our most popular stages sold. This also is the greatest product life and the lowest chance for loss.

Stage 5 – Yellow with Green Tips

Our most popular stage sold in our store. The color is yellow, and the tips are lightly green. This is referred to a green tip banana. This is one day out, so you would receive them today and they would be perfectly ripe and ready to use for your breakfast display in the morning.

Stage 6 – a perfectly ripe banana.

It is all yellow and the fruit is firm with good flavor and has very little green on the stem. Put these out to for your guests to eat, these are ready to go.

Stage 7 – Yellow with Brown Spots

Fully ripe yellow banana with brown spotting. While they may not be the perfect looking banana, they are at the peak of flavor and ripeness for eating and baking. They also have the maximum nutritional value and are fully mature. The brown spots are not in indicator of poor quality, they are sugar spotting and let you know the banana is ripe. They must be treated carefully as they are soft. They can bruise, crack, and split easily so be careful with your handling.
